Mango Cucumber Salsa

I love this salsa with cucumbers and mangoes because it's so crisp and refreshing. It's also got just the right amount of sweetness to it, and you can adjust the heat how you like it.

1 mango, peeled and cut into small pieces
1 cucumber, peeled, seeded, and chopped
2 cloves garlic, pressed or finely chopped
1/4 cup red onion, finely chopped
1/2 to 1 whole jalepeno, seeded and finely chopped (use more if you like more heat, but I'm a spice-wimp, so I always just use half.  You could use a hotter pepper instead too if you want)
1 Tbs chopped cilantro
juice from 1 lime
salt to taste

Combine all ingredients and let sit in the fridge for at least one hour.  Serve with your favorite chips...I love these Juanita's chips.

  1. Okay, I'm not normally a fruit in salsa kind of girl, but this looks delicious. I AM a huge fan of mango so that probably helps. We'll have to give this recipe a try. Maybe I can split the batch and add extra peppers to my husband's side, I'm a spice-wimp too.
