Pink Grapefruit Meltaways

Grapefruit flavored meltaway cookies have me dreaming of summer!

Citrus and summer are a perfect pair so make up some of these grapefruit cookies for your next picnic. I’ve made lime meltaways before, but when I had the idea to swap the flavor for grapefruit, I couldn’t wait to try it. And let me tell you–they are good!

Pink Grapefruit Meltaways

3/4 cup butter, room temperature (1 1/2 sticks)
1/3 cup powdered sugar plus more for coating
1 Tbs grated grapefruit zest
2 Tbs grapefruit juice
1 Tbs vanilla
1 3/4 cups flour
2 Tbs cornstarch
1/8 tsp salt
2 drops red food coloring (optional)

Blend butter and 1/3 cup powdered sugar in a mixer with the whisk attachment. Mix until fluffy, about 2 minutes.

Add grapefruit zest, juice and vanilla (and food color if adding.) Mix until fluffy again.

In a separate bowl, combine flour, cornstarch and salt. Add to butter mixture and stir til combined. Split dough in two and roll each into a log about 1 1/4 inches across, on a piece of wax paper. Roll in the paper and refrigerate one hour so it’s chilled completely.

Heat oven to 350 and slice dough into 1/4 inch slices. Line a cookie sheet with parchment paper and place dough. They don’t need very much space between them, only about an inch or so. Bake 10 minutes. Cool one minute, then coat in powdered sugar.

Even my picky kids totally loved these, and I was skeptical because of the citrus flavor. Have you had meltaways before? Are you convinced to try this grapefruit kind? Let me know!

I love bright citrus, so these cookies were very intriguing. Pretty easy to whip up, and I like that you can chill the logs for a while (will probably freeze half) and cook smaller batches. I just wish that the grapefruit flavor was more pronounced. I realized as I was dumping in the 1 Tbsp of vanilla the recipe calls for that it seemed like a lot. It is. There isn't an overly strong vanilla taste, but I'm sure it hides some of the fresh grapefruit taste that could've been there. I may try them again, but will definitely add less vanilla, if any.
